How to manage fields?

Hi!

In our company we use YouTrack for a long time. Today I created new project — I choosed option "demo project", so I got project with some fiels

I want to edit this fields, e.g. I want to edit a set of values. But there is no fields into a settings - you can see it on the screen 

How can I manage fields?
