Issues States - Customize Next Possible State

1) In an Submited Issue we can now change the State to any other when we only wan't for example to be possible set: Open, In Progress or Obsolete  (Likes Trac work, each state has only some posible options)

How can I customize the next possible States ?

2) We can customize States Names ? For example to Spanish: Nuevo, Reportado, Trabajando. If I change them for the bundled States YouTrac get corrupted (I suppose because the workflows)
If we update the workflows too it must work ?

1. You can control transitions between states using special type of workflow states machine.

It's just needed to specify target states set for source state. It's possible to add condition on transition, time event etc. Look at the example here.

2. Right, you can rename states names on Administration > Custom fields (or project > custom fields) > 'States' bundle and fix (or detach) workflows. For the last download Workflow Editor, download workflows schema on it and replace unresolved links to old states names with new ones.

1. Great, thats what we were looking for, In the Administrator Manual, that info is hidden, would be great to add a link to the sample State Machine or in the States Bundle
Also will be great a link to these docs at the botton of Customs Fields section in the Administrator Panel

2. Great, we are going that way :)
  Maybe the problem is on YouTrac upgrade, the upgrades reset the workflows ?

I don't sure I caught the idea, but Youtrack upgrades must not affects workflows. Did you experienced workflows were detached after upgrade or stop to work?
The problem described in p.2 is connected to state values names. Value rename doesn't update any workflow, related feature is planning to 4.1 - http://youtrack.jetbrains.com/issue/JT-12372
