i would like to delete all content and keeping only project structure and workflow and restart the import from a mailbox? Is it possible to it easily ?

You can remove issues from every project sequentially.
Choose as a context a particular project (or execute search for project: {project_name}), select all issues, call Command Window and execute
command.
If you have a huge amount of issues in each project, it's better to delete issues by portions, instead of all issues at a time, to prevent problems with performance.
Speaking of restarting mailbox integration, please clarify the use case. I assume, you would like to configure it once again from scratch. And why do you need to restart it, if it works correctly?
