Hide or Disable Knowledge Base
I'd like to know if there's a way to hide the link at the top of the screen for the Knowledge Base in YouTrack 2020, as my users are not far enough along to utilize it, but I don't want them to get into it at this time.

This link's visibility is defined by the user's permissions. In other words, if the user has permission to 'Read Article', then this link will show up. Otherwise, it won't.
So what you need to do if you want to disable this link is to revoke the aforementioned permission. For that, proceed to Settings → Roles → Adjust the permissions of the roles as described here: https://www.jetbrains.com/help/youtrack/standalone/Manage-Permissions.html For example, you can leave this permission for the System admin role only.
